The most likely culprit is usually a combination of the two. If the original installation of the oven was improperly done there can be quite a bit of trouble with your cooking. There are also times that you don’t set the oven controls properly or place the baking pans in a less than ideal location.
Let’s check on the mechanical malfunctions first. The basic focus should be to make sure that all of the oven parts are working correctly. For example, the thermostat has to be accurate or else it will not reach the heat setting which you have chosen. Then there are the seals around the oven door which keep the heat inside, rather than letting it escape and cool the oven. Last of all, we should make sure that the oven is level on the floor, or it will cause our cakes, breads, etc. to come out thicker on one side and thinner on the other. Not very pretty and definitely very difficult to frost.
When we are baking with two pans at the same time, we must place them properly in the oven. For example, the pans should not be close enough to touch each other or be in close proximity to the oven’s rear wall. They should be placed on different level racks as well. This will allow the air in the oven to circulate around each of the pans, and therefore to bake both items evenly.
The racks are numbered from the bottom of the oven upward. If you are baking two cake pans, they should be situated on the same rack, either number four or five, or a bit lower than that vertical center of the oven. Cookies or biscuits using baking sheets should be placed on the fourth or fifth level.
